Happy Gillis’s tale began under the auspices of Todd Schulte, who saw the potential for a unique dining experience in the tight-knit Columbus Park community back in 2008. This promise of a neighborhood cafe that doubles as a convivial hangout became even more pronounced in December 2013 when Josh and Abbey Eans took over the reins.
Injecting their vision and passion into the establishment, the Eans family contributed to the cafe’s burgeoning reputation and decided to plant their roots in Kansas City, MO, living among the community they served. For a decade, they curated memorable dining experiences until their new adventure beckoned, passing the torch to Cory Stipp in December 2023 while ensuring that the legacy of Happy Gillis continues to flourish under the careful stewardship of long-time employee Jeffery Gatton.
